Change the pages
Can we change the location of the 'exit course' button and change the 'bye' page at the end.

The Exit Course button in your screenshot cannot be moved to a different location, but you can also add an Exit Course button by going to All Blocks>Interactive>Button. Then click on Edit and change the button's function to Exit the Course.
To answer your second question, You can edit the text on the "👋 Bye!" page by going to Settings > Labels. Scroll to the bottom, and you can edit the message on the right side of the screen.
