Sorry to hear about the trouble with the PDF output. I tried publishing a sample Rise course to PDF but did not notice the issue. All five columns are visible in the attached PDF output.
Can you try tweaking the "Content Width" in the Table Format options as shown below? Does choosing Small (S) or Medium (M) make any difference in the PDF output? If not, would you be willing to share your Rise 360 course with our support team in a case so we can dig deeper into the problem?
