I don't believe it's currently possible to modify the color of the folders included in the Folders Engage '13 interaction. It looks like they're currently only available in the beige/brown color.
If you'd like to see additional color options for this interaction, I would definitely recommend sending over a feature request. These requests go directly to our development team for review. I would also suggest being as detailed as possible. The more information we receive, the more we can gauge the usefulness of the feature.
In the meantime, perhaps the Accordion or Tabs interaction would work for your project? You can modify the colors of the tabs and they are quite similar to the look of folders, depending on how you set up the content. Just a thought, hopefully that helps :)
