Is there a way to publish the input of learners in my course? My plan is to insert some open questions. After answering the question the learner can read the answers of other learners (anonymus). Can I use a data entry or survey question for this purpose?
It's not possible to "share" learner responses in an existing quiz. These are pretty much "private sessions" running for each learner.
However, I have suggested something in the past that I think may work for your project. What you could do is have learners submit feedback either on a third-party survey site, or on a social site/group (maybe even Facebook?). You could then pull that page in as a web object.
Learners would be able to communicate and share their responses within the course itself, without having to navigate to another site.
