Hi Maggie! This sounds like it could be a great discussion for the community. In order to gain better exposure to your question, I also recommend posting over in the Building Better Courses side of the forums. This will just help to make sure that the community sees your question and can provide you with some helpful feedback. :)
Storyline would have the quizzing feature that would allow you to gather information from a user, but there isn't a feature within Storyline to generate instant charts or graphs based on how a user answered or how a series of users answered. I wouldn't be surprised if there is a community member who has done something fancy with states/variables/trigger to make the charts appear - but it's outside my area of expertise (and our general support areas) so perhaps look at reaching out in the Building Better Courses side of the forums.
