Just make sure to exit the app from the system tray and relaunch for the changes to take effect.
The screen recorder is amazing on the storyline 360 app, I didn't have to find a way to copy the Chinese text as it did it itself. Truly an amazing feature.

In the menu next to your profile picture, select the second option. This is Preferences.
Use the pull-down menu to change the language.
Click the blue (or left) button to save the change.
