With all concerns about Flash, our organisation has completely removed Flash from all office computers. This has resulted in us not being able to preview any content we create and ongoing issues with creating Storyline.
Are there any updates that would remove the requirement of having flash installed on your machine to create/preview content any time soon or does it exist in Storyline 360?

Storyline 360 and 3 preview the HTML 5, I understand they have removed a lot of the reliance on flash not sure if it is totally removed though.
You could see if It would let you install the demo to see.

You'd still need Flash installed to author in Storyline 360 or Storyline 3. The system requirements for all of the Articulate 360 tools are here, and Storyline 3 is here.
