To hide the Menu for an entire project, deselect the Menu in the Features section of the Player Properties. To hide the Menu on a given slide or slides, open the Slide Properties, and select Custom for the selected slides. Then deselect the Menu checkbox.

There are 2 ways to control whether the Menu shows.
