How can I watch live demonstrations or case studies of professionals doing 'real' work?

Dear experts,

I would like to watch live demonstrations of professionals in different industries doing their 'real' daily work, for example: graphic designers, lawyers, journalists, architects, musicians, doctors - anyone who uses their computer for creating or reviewing documents and media?  

I mean, watching real life case studies of exactly what they do in practice so I can see and learn all the details with nothing 'skipped over' or fast-forwarded so I know how long it would take me to do that work myself, just like I was there 'watching over their shoulder' at their screen and hearing them comment on what they were doing and why, and so I could ask questions as well (but all on my computer at home and without disturbing them)?

This wont work for everything, but you can find people who do tutorials on graphic design, programming, and a few other skills on youtube. They typically go into detail about their processes, what tools they're using and why they're doing what they're doing.

Other than that maybe you could try to get in contact with some people in these fields and see if they would be okay being your SME and letting you observe their work? Im not sure how else you could go about doing this.
