Hi Michele,
we are also using an LMS and publish with the same scorm as you. (for this time)
In order to track each question we had to transform the report.html file.
Actualy we could access to question with student answer, penality then using the try again mode and variable using during the test.
The analysing job consist in copy/paste the content of each file to excell or another tools.
Ist's quite easy.

It's up to your LMS in how they handle/report the information being sent to them.
If you want the actual question text reported, you'll need to publish to SCORM 2004 or Tin Can API.
