I'm not sure I understand exactly your question but let me try.
When doing screen recordings I almost always do the audio and screen recording separately. I record the screen first in Step-by-step mode, clean it up as necessary and then add the narration text to the notes field of the proper slides. You can then add your audio on a slide by slide basis either recording it directly into Storyline or using another audio application to create individual sound files which can be inserted into each slide. This gives me a lot of flexibility and generally creates a much smaller published size than doing the "Video on a single slide" method.

Yes, you can certainly do so. You can choose No Audio during your screen recording:

You can record the screen without audio by separating the audio and sync the audio with the screen.
