One thing you can do is display a variable's value at any time with %variablename%. With simple things, I add a text block to a slide and add in the text to track the variable. One thing I started doing with complex story files is create a slide and add all of my variables to a list (with a label). I add a button to my master slide to pop this slide up as a lightbox and I can track all of the variable values that I care about.
