In need of quick direction

Hello. I am circumstantially back in the game. I have not done any content creation with articulate in 6 years(I used Studio the last time I created content).  I played with Storyline briefly a few years ago, but found it was a steep learning curve after being away for so long (I'm a teacher not an instructional designer). I have found myself teaching mostly ground classes over the years, but NOW my world is upended and I am trying to create content for 2 courses that have been move online for the fall. I am exploring using Articulate again.  I have my 360 trial up and running.  I am hoping someone can point me very directly toward the tools in the collection I can/should focus on to get me quickly up and running. I do not have a lot of time, so efficiency is key.  When I look at all the options in my suite, I am overwhelmed because I lack the intimate knowledge to make a decision about where to start/focus.  I also need to choose the tool that will play best with video (I teach Sign Language). I could easily get distracted and down the wrong rabbit hole if I don't get some help here.

Hi Allie! Welcome back! As a former elementary school teacher, I can appreciate needing something efficient. 😊

Storyline 360 has a lot of wonderful options. It sounds like Rise 360 might be a great place to start. You can easily create fully responsive courses quickly and the output is beautiful. You can check out the Getting Started with Rise 360 series. It has a lot of good stuff in there including video tutorials and a user guide. I hope that helps give you a starting point.
