Hi Valencia. Kari is correct. There is no way to globally change the font color. You can change the font color for each block and then save your blocks as a block template for quick re-use. You can learn more about using block templates, here.

If you are asking if you can change the font color globally for an entire course the answer is no. There is no option under Themes to do this.
You can only change the font color per block, not for the entire course.
