Personally - I would not bother - and would invest in a USB/standalone microphone and a pop filter instead.
Make sure you have a big pile of pillows or similar sound-absorption around the mic.
The sound quality will be infinitely better than a headset.
I started off with one of these and it was fine for the job - but spend as much as you can; I have heard good things about the Snowball.
You should also decide if you are going to record directly into the eLearning application, or whether you are going to record into, (for example...) Audacity, edit and produce, and then import into your application.
I'll second the Snowball recommendation. I've had one for several years and it consistently delivers excellent audio. There are some really nice headsets with noise reduction tech on the market but I don't think you can get them for under $200.
