Part of the reason why the text is not clickable in a Storyline 360 course is to protect the content from being copied without permission. I'd recommend creating a Feature Request to our product team if you'd like to see changes to how Storyline 360 handles published text in future releases. For your reference, here is how we handle feature requests.
