I would like to design one course for different audiences such that some lessons will only be relevant to one type of audience. Can I add different user access restrictions for lessons within the same course for different users? (I don't want to create a new course for every type of role if I can help it; makes things operationally complex given there's overlapping content.

While there isn't a way to add different user access restrictions for lessons within the same course, you can use Block Templates to make building courses for the other roles/users easier.
