I gave it a try and it looks like even if you try to crop the image to a square, Rise 360 will still force it to fill the whole image section, making it that landscape rectangle no matter what. A simple thing you could do is put the picture in PowerPoint, crop it to a 1:1 aspect ratio, and save the entire slide as an image, then import it into Rise 360. The picture will have the white space from the PPT slide on either side. Here's an example where the dog photo is a square:
