Hi Ed! Good question! There isn't a way in Rise 360 to automatically have the checkboxes mark themselves when completing another action. 

You can try creating an interaction like this with trigger actions in Storyline 360 and insert it as a Storyline Block. 

The community may also have some custom solutions for this with Javascript.

I am using the check boxes in a Rise course so the learner can actually CHECK the boxes on their list of tasks. However, the boxes do not stay checked once the learner exits the course and resumes later. 

What am I missing? Is there something I am doing wrong when publishing? How can I get this to work? This should be interactive!

In my situation, we wanted to provide a list of things that needed to be completed.  The learner would check the box as they completed each item, but since the process spanned multiple days, progress was always lost when they came back.

Sure, they could use a notebook or scratch paper to record their progress, but then why not skip Rise 360 altogether and use a printed checklist?

If this feature could be added to Rise 360, it would make things a lot easier.
