Does anyone know how to add Menu/Notes/Glossary (etc) buttons to the player? I don't want those items on the side, where they normally are, in the side menu. Rather I want buttons for each on the top of the player. I see how I can add the NAMES of thesse buttons by clicking on the paper-icon in the player properties window, but I don't know how to add actual functionality. That is, how do I make the Notes button show actual NOTES?

Great question. Did you know that you can move those items into your topbar vs the sidebar? Then you have all the functionality needed.
I made a quick Peek recording here for you using the Notes as an example since you mentioned that.
