Adjusting Quiz Settings

Hi.  I haven't posted a discussion to these boards in at least 5 years!  I was hoping someone could help....

My predecessor setup several courses, and many of them do not have the proper quiz settings, so that when one completes, their completion doesn't log.  I'd love to figure out how to go back and fix this, and I'm looking for some kind of literature on how to set the quiz settings properly, so I can figure out what went wrong, and which courses need to be republished.  Could someone direct me to the proper literature?  When I did a search I found a bunch of discussion boards talking about quiz properties, but no articles on how to set them.  Thank you!
