Best way to create closed captioned

I've looked at and experimented with several different ways of doing this. Can you answer the following?

1. How long are your videos / are there a lot of captions to be entered?

2. Do your videos need to be embedded in the course itself, or can they be embedded from a video service such as Vimeo or Wistia? There are timeline related limitations imposed when embedding from an outside source.
