Canvas LMS and Storyline Tracking User Input Data

I can't seem to find a good answer to this question. I am tasked with using Storyline and Canvas. I have a request to be able to track the exact responses to quiz questions. Not just completed and a grade. Does anyone know if this is possible or am I better off just sending the learners to Qualtrics for a recordable survey? Specifically we are gathering data from doctors to create the proper feedback for a course that will be a clinical assessment tool. So the doctors are taking a course that watches videos of actors portraying preceptors with interns and patients in the emergency room. The doctors will give feedback on if the enactment is proficient, competent or novice to make sure they agree on the content matching the skill level. Hope that makes sense.
