I just posted a SCORM 1.2 output on my LMS on Docebo and it works fine but when I review the results report, it shows me "Scene2_Slide1_FreeFormPickOne_0_0" instead of the actual question text. I've tried looking everywhere while editing on Storyline but I can't find a solution. I have attached a screenshot of what it looks like.

I've just tested an SL360 question published to both SCORM 1.2 and 2004 on SCORM Cloud. It seems that the SCORM 1.2 publish does still send cmi.interactions data but doesn't include the question text.
A SCORM 2004 publish will send the question text. It appears in the cmi.interactions.0.description field. Note that it only appears here if you have used an actual Question Text field in your question. If you created your question from a Free Form slide you probably haven't. In which case the description will simply say "Pick one" (for a Single MCQ).
You can add a Question text field to your Free Form question slide by simply copy and pasting one from a standard Graded Question slide.

Have you tested publishing to SCORM 2004? The documentation I shared above about what is sent to an LMS is still valid.
