Can you have a link in a SL360 course that a user can click that will pull up another course...e.g. from a menu, can a user click a course (outside of an LMS) that will pull up a separate email?
You can certainly hyperlink to another published course link from within your course if you'd like.
I'm not following your question about a menu to click another course that opens an e-mail though. Would you be able to further explain what you would like to create and I'm sure someone in the community will be able to help.

You could use the Resource menu from the player and link to external contents in a new tab/window.
You can also add links within a slide of your project to open a link in anew tab/window.
