But there is no Edit button or Question panel..... REEEALLY frustrating.... not happy.
In addition to what Mike has shared, I was wondering if perhaps your Question and Trigger Panel accidentally got hidden. Here's a thread with a video that shows how to fix that...just in case that's what's happened.

Hi Chuck! Sorry for the confusion. Can you share a screenshot of what you see?
If you inserted a multiple choice quiz slide you should see something like this with a "Edit Multiple Choice" button :
