Our IT Dept, recently upgraded my computer and failed to tell me that they would be re-formatting the hard drive. I lost EVERYTHING! Re-installing Storyline was no problem but here's a question; Is there a way to import published Storyline LMS courses from our server back into Storyline so that I can edit them as needed?

Unfortunately there is not. :-(
The published folders/files don't include a copy of the .story file which is what you would need to be able to edit them and continue.
