Multiple courses in one

I have 5 separate courses I built with each with a quiz. Now they want to take all  5 courses with the quizzes and place them in one course. (I've never built a course with separate SCOs before only with one module). The LMS they are using is Moodle. My question is do I build a course will all of the courses and quizzes in it and package it up in one zip file? Or do I package up each zipped up course separately and they place each course in the "topics" in Moodle? Will Moodle be able to track each quiz separately like that? They so want to be able to have the students to take any of the courses in any order so they have to have the tracking of that quiz in that certain course. Once they've taken all of the courses and quizzes then they will get the certificate at the end. I appreciate any  help you can give me. If you have an example that I can download to look at to see how its done even better.
