Is there a way to have the pause and replay features of the seekbar without the seekbar itself? I would like the student to have time to hear, digest and replay the material but not be able to skip to the end.
I'm afraid not - it comes as a complete "package" in the design of the seekbar.
What you could do, however, is create custom buttons for your slide.
If you insert a custom play/pause button, you could trigger a "pause" layer. To do this, you'd just need to open the layer when the learner clicks "Play" and have that layer set to "Pause timeline of base layer". Have the layer close when the user clicks on the button again.
For the replay button, just trigger the button to jump to the same slide on click. Now, for this you'll also want to set the slide properties to "Reset to initial state".
Let us know if you have any trouble with this, or any questions.
