I think we'll need a bit more information about what's occurring with your file - are you clicking on or interacting with the last page shown or is it just a static final image you'd like to show? If it's the latter, I might suggest trying to click within the window to see if Storyline will capture that and then insert as a slide - you can always delete the reference to the clicks if needed. Also, it's worth checking that you're working with local project files as described here as working on a network or USB drive can cause unusual behavior.
The last click is showing, but the final screen does not appear. I can easily do a workaround by doing a screenshot of the last screen, but it's always best to resolve the actual issue.
In order to display record screens, you need to take actions while the screen is recording. Actions like click, double-click, dragging and typing. Otherwise, SL recording wont record screens.
Yes - you'll need to take an action in a step-by-step recording in order for it to show up. In a single video, that won't be the case.
If you simply want to show the screen, but not have the learner take any action, you can remove any hot spots or triggers assigned to the interaction and leave the slide with just the image of the screen.

Yes, SL only recognizes mouse actions when screen recording. You can simply click and drag somewhere on the screen.
