Is there a way I can change a character throughout my entire course with one command? Or do I need to select that character from every page and change them manually one by one?
Unfortunately, if you've already placed characters on multiple slides, you'll need to modify each of those characters.
However, it may make things a little quicker if you provide the character(s) on a Master Slide. You could place them, then remove the originals. It may also help to use masters and layouts in the future, so you can make the changes to one or two layouts, instead of all of the slides in your project.
