Those variables are created automatically when you include a results slide, and can't be adjusted as you would with a variable you created yourself. There are a few tutorials here about the different types of variables you can add and adjust within your Storyline file.
The jump to trigger will allow you to insert the name of any slide as a target, which is what I imagine you want for a menu, e. g. If user chooses 6, jump to slide "Step 6".
Actually, I want to use the name of the slide to be shown as a text. I suppose that slidename is an internal variable because you can select the slide as a target.

Are you using Storyline 360? If so, the slide numbers feature is exactly what you need.
You can even choose to exclude all slides except for quiz slides. Details here.
