With file sharing disabled, I currently have to copy files from my MAC drive to Parallels via a memory stick and back again.
Does anyone have any tips on better ways to manage this? Is there a way of accessing my Mac files via Parallels, or Windows files via Finder without third party software?
Install Dropbox or One drive even iCloud - probably not instantaneous transfer but gets over any parallels incompatibilities (you will need to be network connected)
Just to clarify: You would need to Install cloud app in both environments

Even with the Shared Profile turned off (nice job), you can still share files between Windows and Mac. Here are my settings:
I share all files and my profile and have no issues.
Quick fix:
