Sorry you're having this issue! Are you using Storyline 2? If so, I wasn't able to reproduce this on my end when adding a Data-Entry field and Variable Reference to it on the next slide. I'm able to see the "@" both when entering an email in the Entry Field and then in the referenced Text Box on the next slide when Previewing the scene. I've attached the test file I created for you to take a look at. If that does not help or you're trying to accomplish something different, it may help if you attach your project files to a comment so I can take a look first hand. :)
Glad to hear that it's working as expected after publishing, however I want to make sure your software is performing as expected in Preview as well. If you haven't already, I would make sure to update Storyline 2 to it's latest update and verify that you are running the latest Flash Player version in Internet Explorer. If the issue still persists, try following the steps in this article for your version of Windows to repair Storyline 2. Let me know how that goes for you!

Is there, like in flash, somewere were you allow special characters to textfields?
