I still feel quite new to e-learning and course building but I have been asked to show my portfolio to a few people. I'm not sure how to get started or if would this mean setting up a website?
I work in a data protected industry so I'm not able to put things onto memory sticks, etc.

You really have a few options to show your work. One is to host your own portfolio on a website you setup or use a pre-existing web portfolio service. I wrote about this in an article you can find here: http://bridgehillls.com/perfecting-your-e-learning-portfolio-a-closer-look/
