My team has created a Rise360 course and plan to share it with an incoming batch of summer students. We have included a brief "test your knowledge" (quiz) section at the end of the course. We want to include an open-ended question and see how the students respond (so we can adjust our teaching accordingly). Is this possible with Rise360? If so, where can I access this quiz data? Thanks!
As Karl mentioned, one way to add surveys and open-ended questions to your lesson is to embed a survey from a third-party tool (like Google Forms or Survey Monkey) using a Multimedia Embed block.

Rise does not have a block type for open ended questions.
I recommend using an external survey tool and embed it into your Rise course.
