In fact, I found a number of posts on the same subject, with the same outcome. Unless anything has changed, or anyone can correct me, I'm going to assume this is still not possible.

You're right -- it's not possible to track more than one quiz in Rise 360. Navigation control by requiring a passing score on a quiz to continue is the only way to ensure a minimum score in each quiz before considering the course complete at the end.
I'll tag this discussion for updates if we make a change that will help.
Although you cannot track all the quizzes, if you set the menu to restricted and ensure the knowledge checks are set to must pass when they complete the course you will know they completed the quizzes at 80%
