If anyone else has the same issue, I managed to find the problem and fix it. (hopefully, it doesn't go rogue on me again in the future!)
The problem: I figured that for whatever reason the upload internet speed within Parallels was really slow compared to the speed test on Chrome on my Mac.
The fix: So I changed the configuration setting of Parallels from 'Design' to 'Games only'.
This makes the internet faster.
However, with this setting, you need to adjust the Mouse setting in Parallels for 'Don't optimize for games', as it became super sensitive.
All this configuration can only be set by shutting down the Parallels.
