I want our students to have the possibility to change their answers, they entered in text entry fields. At the moment they can only read back their answer, but not change any input afterwards. Is this possible in storyline?

If you are using a built-in question, then while the user is still on the slide they should be able to adjust/change their response prior to submission.
Once submitted, they can adjust answers if you've allowed a retry of the course via the result slide.
If you've used a regular Text Entry field (Insert > Input > Data Entry > Text Entry) in your course, then users will be able to change this as needed.
What version of Storyline are you currently using?
