Unfortunately, you cannot change the colors for incorrect or correct responses when using the default template for a Matching Drag-and Drop interaction. You can change highlight colors, but that wouldn't really accomplish what you're after.
How about creating a freeform Drag-and-Drop, instead? This way you could use states and change the way your shapes appear after they've been dropped on either a correct or incorrect target, or after the learner has clicked the submit button.
