The only quiz options that have states are the True/False, Multiple Choice and Multiple Response. I use variables to determine if a user has already answered a question, and change the state to selected.
Can something similar be done on quiz options that don't have states?

Yes but you will have to validate this after submit. This means adjusting the variable values on the feedback layers.
