I am designing some courses for my organisation and I'm wondering if I have an entry quiz at the start of the session and an exit quiz at the end of the session, is it possible to collect the results of both quizzes to track how much people learnt during the session. How do I do this?

You can certainly have results of both quizzes and even have a master 'results of results' at the end via a result slide as well.

Yes, if you set up your results slide, then you can publish to LMS. Check out this tutorial for information.
