Is it possible to collect info throughout a course (but not a quiz) and give learners a summary at the end?
For example, mid lesson we ask learners to type in "a local community need". The next lesson, they type in "a solution to local community need". At the very end they are able to have one sheet with all their responses.

If you're wanting to show their text later without the need for a quiz, adding a text variable for each response and using variable references to display their responses on a slide would be the way to go!
