Text Variables Misbehaving in Mobile

I'm working on modules that utilize text variables in a number of places. In order to best customize the modules, we incorporate the text variable into phrases such as:
From: %Coworker%
Subject: %Company% Quarterly Numbers
When launched on a PC browser, we see no issues.
When launched on a mobile device (iPhone 6s - iOS 10.1.1) through our LMS (Moodle), the text boxes with the variables in them move - as in, to the top of the screen or behind images.
We do not publish for Articulate Player because that is not a solution desired by our customers.
Has anyone else experienced this?
The only workaround we have found is to place the variables in a text box of their own. This is not desirable because we translate our modules and it will cause spacing issues.
Thoughts?

Matthew, I completely understand that it takes on a system font if the screen font is not available, but I've never seen it completely move the boxes to another location on the screen. Have you?
We re-created it in a different text box than the other font and it worked.
We haven't tried to recreate the behavior - I was hoping someone out there knew what was causing it.
Unless my entire team needs to repair Storyline, I don't think that's the issue. Here are a couple screenshots of what happens. The one with green text - that's the best example. All text on the screen was in the same text box originally. As you can see, it jumped it up to the top of the text box it was in (totally weird).

I'm seeing an issue reported to our QA Team regarding a variable number display and the behavior seems the same. I'm going to add this thread for our QA Team and for update here when applicable. Thanks for the details and the images as that was helpful in understanding what you were reporting.
