You'll find all the items and different sections you can change as a part of the Player -> Colors and Effects. This tutorial has a job aid to help you narrow down which colors match which sections of the player. Also, if you're looking at changing the Notes font color, notes are formatted from within the individual slide notes panels. Take a look here.
