What type of course are you asking about? A course with video tutorials on each of Office 2007's major features? Are you looking for ideas on outlines, topics or task-based projects?
The below links from Microsoft are great. These links will compare Office 03 and show you how to perform a the same task in Office 07. These are great and I use them all the time.

Yes ..a course with video tutorial or even just using call outs and simple simulation.
