E-Learning that resides on local PC with no Internet access

I need to create an E-Learning course that does NOT require Internet access, and will save data collected to the local (same) notebook. Specifically, going out into rural areas, educating individuals on cancer, and collecting data from their responses.
- First, is there built in function that would permit this?
- If not, is there a Widget that would allow this?
- If not, would it be possible to install the E-Learning software, Linux, MySql, and Moodle on the same notebook to allow this to take place?
Remember, no Internet (after initial installation, of course). Or if there is a better solution, I would be very interested.

Hi mark, if you publish to cd this will run locally, you can either save out to a text file using JavaScript or use the flash cookie, no additional work required.
I wouldn't run moodle locally for this.
