As I grow professionally in this field, I really need to begin to understand the LMS side of things. Can you recommend any resources or reading I can seek
A less often considered choice is the LMS vendors themselves.... Many of them have extensive support and community resources available. This can include how-to videos, FAQs, Glossaries, and active forums.
To be fair some of these are for existing clients only, but not all. And also many LMS vendors will grant access to these areas as a preview of their support for those that may be interested in their products at some point.

Hope this helps!
There are a few I like most of all:
brandon-hall.com
talentedlearning.com
theelearningcoach.com
elearninglearning.com
elearning247.org
elearningindustry.com
blog.capterra.com
theedadvocate.org
gettingsmart.com
thejournal.com
teachercast.net
edtechtimes.com
theeducatorsroom.com
chronicle.com
theelearningcoach.com
Also, read blogs of LMS companies. The vendors share a lot of useful info there. Good Luck!
Hi Megan
My suggestion would be the Moodle community forum:
