Is there a way to block reviewers from seeing prior published projects in Review 360? From my view you can see still the menu in the upper left corner, but does a reviewer see that menu option?
Your reviewers will still have access to your course in Review 360 as long as they have the URL. It does not create a 'directory' for them, but they can see current and previous versions of the same course:
A quick way to make an adjustment to access without re-publishing is to set or change a password to your course if needed:
