How do I insert more than just one paragraph/description and one image per section (expansion)? I would like to have three images with captions...can this be done?
The pre-built lessons give you zero flexibility. They are what they are.
You can drop a wide variation of blocks in a block type lesson. Although again, the blocks are not that flexible either. There's a whole bunch of them so you have a lot of options. Obviously not every layout possibility is in there and sometimes you will need to be creative or find another way of presenting your information.

In addition to what Jeff said, I wanted to suggest using the Block with the Tab interaction. That would allow for text in addition to a photo, and a few tabs available to have the images all on a single screen - but just have to toggle between the tabs.
I know you were looking at the interactive tabs (such as the accordion) and commented on the lack of flexibility. I wanted to just give you a heads up that a Rise release dropped today to allow for unlimited tabs...so you'll have a bit more flexibility as you use those interactive tab style blocks.
